  • 1 cup Georgia peanuts, roasted and unsalted
  • 3 medium tomatoes, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper

 

INSTRUCTIONS

  1. Start by roasting the Georgia peanuts. Preheat your oven to 350°F (175°C). Spread the peanuts in a single layer on a baking sheet and roast them for about 10-15 minutes, or until they become fragrant and slightly golden. Remove from the oven and let them cool completely.
  2. Once the peanuts are cooled, roughly chop them into smaller pieces. Set aside.
  3. In a medium bowl, combine the diced tomatoes, chopped red onion, finely chopped jalapeño pepper, and fresh cilantro. Mix well.
  4. In a separate small bowl, whisk together the lime juice, extra-virgin olive oil, minced garlic, ground cumin, salt, and black pepper until well combined.
  5. Pour the dressing over the tomato mixture and toss gently to coat all the ingredients.
  6. Add the chopped Georgia peanuts to the salsa and mix gently to distribute them evenly throughout the salsa.
  7. Taste the salsa and adjust the seasoning, adding more salt or lime juice if desired.
  8. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
  9. Before serving, give the salsa a gentle stir to redistribute the ingredients.
