Serves :4-6

 

INGREDIENTS:

  • 1 pound dry pinto beans
  • 5 cloves garlic, chopped
  • 1 tsp. salt
  • 1/2 pound pork, diced
  • 1 onion, chopped
  • 2 fresh tomatoes, diced
  • Few sliced jalapeno peppers
  • 1/3 cup chopped cilantro

 

INSTRUCTIONS:

  1. Place pinto beans in a slow cooker. Cover with water. Mix in garlic and salt.
  2. Cover the slow cooker and cook on High for 1 hour.
  3. In a skillet, cook the diced pork over high heat until brown. Drain the fat.
  4. Add chopped onion to the skillet and cook until tender. Mix in jalapenos and tomatoes. Cook until heated through.
  5. Transfer the pork, onion, jalapenos, and tomatoes to the slow cooker with the beans. Stir everything together.
  6. Continue cooking for 4 hours on Low in the slow cooker.
  7. About half an hour before the end of the cook time, mix in the chopped cilantro.
  8. Once the cooking is complete, serve the flavorful pinto beans with your favorite accompaniments, such as rice, tortillas, or a side of avocado and sour cream.
