Fried Cakes with Apple Sauce

About

Brenda Gantt

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Fried cakes with apple sauce are a classic comfort food that brings together the warmth of freshly fried dough and the tangy sweetness of apple sauce. This dish offers a delicious combination of textures and flavors that has been enjoyed for generations. The history of fried cakes and their pairing with apple sauce reflects the creativity of cooks throughout history in making the most of simple ingredients to create a satisfying treat.

The tradition of frying dough dates back centuries and is found in various cultures around the world. Fried dough creations have appeared under different names and forms, such as doughnuts, fritters, and beignets. These treats were often made from basic ingredients like flour, sugar, and fat, resulting in a comfort food that was both indulgent and easily accessible.

The combination of fried cakes with apple sauce adds a layer of depth to this comfort food. Apples have been a staple fruit in many cuisines, and the practice of cooking them down into a sauce or compote has been a way to preserve and enjoy their flavor throughout the year. The tart sweetness of apple sauce serves as a perfect accompaniment to the rich, slightly crispy texture of fried cakes.

INGREDIENTS

  • 1 cupful sugar
  • 4 tablespoonfuls Crisco (shortening)
  • 3 cupfuls sour milk
  • 1/4 teaspoonful grated nutmeg
  • 1 teaspoonful lemon extract
  • 1 teaspoonful baking soda
  • 1 teaspoonful baking powder
  • 1/2 teaspoonful salt
  • Flour
  • Apple sauce

INSTRUCTIONS

  1. In a mixing bowl, cream Crisco and gradually add sugar, creating a smooth mixture.
  2. Incorporate salt, grated nutmeg, lemon extract, baking soda, and baking powder into the mixture.
  3. Pour in the sour milk and mix thoroughly to combine the ingredients.
  4. Gradually add enough flour to create a stiffish dough. The exact amount of flour may vary; add it slowly until the desired dough consistency is reached.
  5. Turn out the dough onto a floured baking board.
  6. Roll out the dough using a rolling pin until it’s about 1/2 inch thick.
  7. Use a large round cutter to cut out the dough into cake shapes.
  8. Heat Crisco in a frying pan over medium-high heat until hot.
  9. Carefully place the cake rounds into the hot Crisco and fry them until they are well-cooked and nicely browned on both sides. This should take a few minutes per side.
  10. Once fried, remove the cakes from the pan and drain them on paper towels to remove excess oil.
  11. Serve the fried cakes warm, accompanied by hot apple sauce for dipping or drizzling.
