The history of cherry pie dates back centuries, with pies in general being enjoyed since ancient times. The cherry tree is believed to have originated in Asia and was later introduced to Europe and the Americas. Cherries became a popular fruit in culinary traditions across different cultures, and their use in pies can be traced back to the Middle Ages.

Cherry pies became especially popular in America during the 19th and 20th centuries, with various regional variations and recipes emerging. Cherries were a staple fruit in many American households, and the abundance of fresh cherries during the summer season made them a popular choice for making pies.

Fresh Cherry Pie continues to be a beloved dessert, especially during the peak cherry season when cherries are at their best. The aroma of the pie baking in the oven and the ruby-red filling spilling out of the flaky crust evoke warm memories of family gatherings, picnics, and celebrations.

INGREDIENTS

  • 1¼ cups sugar
  • ⅓ cup cornstarch
  • 1 cup cherry juice blend
  • 4 cups fresh tart cherries, pitted, or frozen pitted tart cherries, thawed
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon almond extract

 

FOR PASTRY:

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ⅔ cup shortening
  • 5 to 7 tablespoons cold water

 

INSTRUCTIONS

  1. In a large saucepan, combine the sugar and cornstarch, then gradually stir in the cherry juice blend until the mixture becomes smooth. Bring it to a boil and cook and stir for 2 minutes or until the mixture thickens. Remove the saucepan from the heat and add the pitted cherries, ground cinnamon, ground nutmeg, and almond extract, creating a flavorful and aromatic cherry filling.
  2. In a large bowl, combine the all-purpose flour and salt for the pastry. Cut in the shortening until the mixture becomes crumbly. Gradually add cold water, tossing the mixture with a fork until a ball of dough forms. Divide the pastry into two balls, making one ball slightly larger than the other.
  3. On a lightly floured surface, roll out the larger ball of pastry to fit a 9-inch pie plate. Carefully transfer the pastry to the pie plate and trim it, leaving about ½ inch beyond the edge of the plate. Add the prepared cherry filling to the pie crust.
  4. Roll out the remaining ball of pastry and create a lattice crust on top of the cherry filling. Trim, seal, and flute the edges of the pie crust to secure the lattice in place.
  5. Bake the Fresh Cherry Pie at 425°F (220°C) for 10 minutes, then reduce the heat to 375°F (190°C) and continue baking for 45-50 minutes or until the crust turns a beautiful golden brown.
  6. Once baked to perfection, remove the pie from the oven and allow it to cool on a wire rack.
