INGREDIENTS

  • 2 cups sliced strawberries
  • 2 cups blueberries
  • 2 cups peeled and sliced peaches
  • 2 cups peeled and sliced apples
  • 2 cups raspberries
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 prepared pie crusts (store-bought or homemade)

 

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the strawberries, blueberries, peaches, apples, and raspberries.
  3. In a separate small bowl, mix together the granulated sugar and cornstarch until well combined.
  4. Sprinkle the sugar and cornstarch mixture over the fruit mixture, ensuring it is evenly distributed.
  5. Add the lemon juice and vanilla extract to the fruit mixture, gently tossing until the fruits are coated with the sugar mixture and the flavors are well incorporated.
  6. Line a 9-inch pie dish with one of the prepared pie crusts, pressing it gently against the bottom and sides.
  7. Pour the fruit filling into the prepared pie crust, ensuring it is evenly distributed.
  8. Cover the pie with the second prepared pie crust, sealing the edges and crimping them to secure the pie.
  9. Make a few small slits or decorative cutouts on the top crust to allow steam to escape during baking.
  10. Place the pie on a baking sheet to catch any potential spills and bake in the preheated oven for 45 to 55 minutes, or until the crust is golden brown and the filling is bubbly.
  11. After baking, remove the pie from the oven and let it cool on a wire rack for at least 2 hours to allow the filling to set before serving.
