INGREDIENTS:
- 2 pounds Lamb stew meat
- 2 chopped Tomatoes
- 1 Summer squash
- 1 Zucchini
- 1 cup Mushrooms, sliced
- 1/2 cup Bell peppers, chopped
- 1 cup Onions, chopped
- 2 teaspoons Salt
- 1 Garlic cloves, crushed
- 1/2 tsp. Thyme leaves
- 1 Bay leaves
- 2 cups chicken broth
INSTRUCTIONS:
- Cut the summer squash and zucchini into bite-sized pieces.
- Place the chopped tomatoes, summer squash, zucchini, sliced mushrooms, chopped bell peppers, and onions in the crockpot.
- Add the lamb stew meat to the vegetables in the crockpot.
- In a separate bowl, mix the salt, crushed garlic, thyme leaves, and bay leaf into the chicken broth.
