Lemon Roast Chicken

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Serves: 6-8

 

INGREDIENTS:

  • 1 whole skinless chicken
  • 1 dash Salt
  • 1 dash Pepper
  • 1 tsp. Oregano
  • 2 cloves minced garlic
  • 2 tbsp. coconut oil
  • 1/4 cup Water
  • 3 tbsp. Lemon juice
  • Rosemary

 

 

INSTRUCTIONS:

  1. Wash the chicken thoroughly and pat it dry. Season the chicken with salt and pepper, both inside and out.
  2. Sprinkle half of the oregano and minced garlic inside the chicken cavity.
  3. In a frying pan, add coconut oil and heat it over medium-high heat. Brown the chicken on all sides until it develops a golden-brown color.
  4. Transfer the browned chicken to a crockpot.
  5. Sprinkle the remaining oregano and minced garlic over the chicken in the crockpot.
  6. Add water to the same frying pan used for browning the chicken. Stir to loosen any browned bits and pan drippings. Pour this liquid into the crockpot over the chicken.
  7. Cover the crockpot and cook the chicken on low heat for approximately 7 hours.
  8. When the cooking time is complete, add the lemon juice to the cooked chicken in the crockpot.
  9. Transfer the chicken to a cutting board and carve it into desired serving pieces.
  10. Skim off any excess fat from the liquid in the crockpot, then pour the juice into a sauce bowl.
  11. Serve the carved chicken with rosemary sprigs as garnish, and drizzle some of the reserved juice over the chicken.
