  • 2 tablespoons instant espresso powder
  • 2 tablespoons hot water
  • 1 carton (8 ounces) mascarpone cheese
  • 1 cup heavy whipping cream
  • ⅓ cup confectioners’ sugar
  • 1 prepared angel food cake (8 to 10 ounces)
  • ½ cup coffee liqueur
  • 2 teaspoons baking cocoa

 

INSTRUCTIONS

  1. Dissolve 2 tablespoons of instant espresso powder in 2 tablespoons of hot water in a large bowl. Allow the mixture to cool, then stir in the mascarpone cheese until well combined.
  2. In a separate small bowl, beat 1 cup of heavy whipping cream until it begins to thicken. Gradually add ⅓ cup of confectioners’ sugar and continue beating until soft peaks form. Gently fold ½ cup of the whipped cream into the cheese mixture, then fold in the remaining whipped cream until well incorporated.
  3. To assemble the cake, slice the prepared angel food cake horizontally into layers. Place one layer on a serving platter. Spread a generous amount of the mascarpone cream mixture over the cake layer. Repeat this process with the remaining cake layers and mascarpone cream, creating a layered cake. Drizzle each serving with coffee liqueur and dust with baking cocoa for added flavor and decoration.
