INGREDIENTS
- 5 medium artichokes
- 4 teaspoons lemon juice
- 2 medium lemons, sliced
- 2 garlic cloves, minced
LEMON-PEPPER DIP:
- 1 cup canola oil
- ¼ cup lemon juice
- ¼ cup red wine vinegar
- 2 tablespoons spicy brown mustard
- 3 garlic cloves, minced
- 1 teaspoon salt
- ¾ teaspoon pepper
- ½ cup diced green pepper
- 2 tablespoons sliced green onion
INSTRUCTIONS
- Cut off the stem at the base of each artichoke. Cut about 1 inch from the top of each artichoke. Use scissors to snip the tip end of each leaf. Rub the cut ends of the leaves with lemon juice.
- Place the artichokes in a Dutch oven and add the lemon slices and minced garlic. Cover them with water. Bring the water to a boil, then reduce the heat. Cover the Dutch oven and simmer for 30-45 minutes or until the artichoke leaves near the center pull out easily. Drain the artichokes and arrange them on a serving platter. Refrigerate them for 1 hour.
- To prepare the Lemon-Pepper Dip, whisk together the canola oil, lemon juice, red wine vinegar, spicy brown mustard, minced garlic, salt, and pepper in a bowl. Stir in the diced green pepper and sliced green onion. This will be served as a dip with the artichokes.
- Serve the chilled Elegant Artichokes with the Lemon-Pepper Dip.
MICROWAVED ELEGANT ARTICHOKES:
- Place the prepared artichokes in a microwave-safe dish, omitting the lemon slices and garlic.
- Add 1 inch of water to the dish.
