INGREDIENTS

  • ⅓ cup all-purpose flour
  • 3 cups milk
  • 2 large potatoes, baked, peeled, and coarsely mashed (1½ pounds)
  • ⅓ cup plus 2 tablespoons shredded cheddar cheese, divided
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup sour cream
  • ½ cup thinly sliced green onions, divided
  • Crumbled cooked bacon (optional)

 

INSTRUCTIONS

  1. In a large saucepan, whisk together the flour and milk until smooth. Bring the mixture to a boil, stirring continuously.
  2. Cook and stir for 2 minutes or until the mixture is thickened.
  3. Stir in the mashed potatoes, ⅓ cup cheese, salt, and pepper. Cook over medium heat for 2-3 minutes or until the cheese is melted.
  4. Remove the saucepan from the heat. Stir in the sour cream and ¼ cup green onions until well blended.
  5. Cover the saucepan and cook over medium heat for 10-12 minutes, ensuring that the soup is heated through but not boiled.
  6. Garnish the soup with the remaining cheddar cheese, green onions, and crumbled cooked bacon if desired.
