Detox vegetable soup is a hearty and nutritious soup made with a variety of healthy vegetables and legumes. It’s a great way to support the body’s natural cleansing processes and promote good health. Serving and preparation time

Preparation time: 15-20 minutes
Cooking time: 40-45 minutes
Serving size: approximately 6-8 servings, depending on portion size.

Ingredients:

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 stalks celery, chopped
  • 4 carrots, peeled and chopped
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 head broccoli, chopped into florets
  • 1 head cauliflower, chopped into florets
  • 4 cups vegetable broth
  • 2 cups water
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) chickpeas, drained and rinsed

Instructions:

  1. In a large soup pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and cook until the onion is translucent, about 5 minutes.
  3. Add the celery, carrots, zucchini, yellow squash, broccoli, and cauliflower to the pot, and cook for an additional 5 minutes.
  4. Add the vegetable broth, water, diced tomatoes, thyme, basil, oregano, salt, and pepper to the pot, and bring to a boil.
  5. Reduce heat to low, cover the pot, and let simmer for 25-30 minutes, or until the vegetables are tender.
  6. Add the kidney beans and chickpeas to the pot, and let simmer for an additional 5 minutes.
  7. Serve hot, garnished with fresh herbs, if desired.

This soup is also easy to customize, so you can add or subtract ingredients based on your personal preferences. For example, if you prefer a sweeter soup, you can add more carrots and reduce the amount of kale. If you prefer a spicier soup, you can add a diced jalapeño pepper or red pepper flakes.
Detox vegetable soup can be enjoyed on its own as a light meal, or served as a side dish with a salad or sandwich. It’s a great option for busy weeknights, as it can be made in advance and stored in the refrigerator for up to 5 days. Simply reheat on the stove or in the microwave for a quick and satisfying meal.
