For authentic cinnamon rolls you will be needing milk that should be 2% or whole, sugar to sweeten the rolls and to activate the yeast, active dry yeast to help the rolls rise, butter for dough, filling and icing, egg for the perfect texture, bread flour to make soft and fluffy rolls, cinnamon because why not! And some salt. The reason behind using bread flour is that it has higher protein content and lighten up the cinnamon roll texture and it produce more gluten which means chewy and soft textured rolls. If you want dairy free rolls you can replace milk with almond milk. You can also replace the butter with vegan butter and vegan cream cheese. Do not overheat the milk because it will kill the yeast and the rolls will not rise. The milk should be warm not hot. Make sure that you use the room temperature butter in the filling. Ingredients:
FOR DOUGH:
- 1 cup whole milk warm
- 1 tablespoon active dry yeast
- ½ cup granulated sugar
- 4 cups bread flour
- 1 teaspoon salt
- 1 large egg room temperature
- 3 tablespoon salted butter melted
FOR FILLING:
- ½ cup salted butter at room temperature
- 2 ½ tablespoon ground cinnamon
- 1 cup brown sugar granulated
FOR GLAZE:
- 4 ounces cream cheese softened
- ¼ cup salted butter softened
- 1 ½ cup powdered sugar
- ½ teaspoon vanilla extract
- 1 tablespoon milk
Instructions:
- Place warm milk in bowl of standing mixer. Add 1 tablespoon yeast. Stir well and let sit until foamy.
- Add ½ cup sugar and egg to the mixer and stir until combined.
- Add 4 cups flour and salt and stir the dough hook from low to high until a large smooth ball of dough is formed.
- Now place it on a floured surface and knead with your hands.
- Place the dough in a bowl that is greased. Cover with warm damp towel. Keep bowl in warm place so the dough rises for about 1 hour.
- Meanwhile make the filling. Combine sugar, butter and cinnamon in a small bowl and set aside.
- Sprinkle flour on work surface. Take the dough and press gently. Roll it in rectangle..
- Spread the filling over dough using spatula. Roll the dough and cut in equal sized rolls.
- Line a baking dish with parchment paper and grease it. Then place rolls equally spaced. Cover and let rise until double the size.
- Preheat oven to 350F and bake cinnamon rolls until golden brown.
- While the rolls are being baked, prepare the glaze. Whip together cream cheese and butter until light and fluffy. Whip in sugar and vanilla extract and add 1 tbsp. milk.
