INGREDIENTS

  • 8 oz dark chocolate (chopped)
  • 3 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 1/4 tsp baking powder
  • 2 large eggs
  • 1/2 cup light brown sugar

 

INSTRUCTIONS

  1. Melt the dark chocolate and butter together in a heatproof bowl placed over a pot with simmering water or in the microwave. Allow the mixture to cool to room temperature.
  2. In a small bowl, whisk together the light brown sugar and eggs until well combined. Add this mixture to the melted chocolate and mix until thoroughly incorporated. Then, add the all-purpose flour and baking powder, and mix until a smooth and consistent batter forms. Chill the batter in the refrigerator for approximately 30 minutes. Chilling the batter helps the cookies maintain their shape during baking.
  3. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats to prevent the cookies from sticking.
  4. Using a medium-sized cookie scoop or a tablespoon, scoop portions of the chilled batter onto the prepared baking sheets. Leave enough space between the cookie dough mounds to allow for spreading during baking. Place about 6 cookies per sheet.
  5. Bake the cookies in the preheated oven for approximately 11 minutes. The cookies should be cooked on the edges but still soft in the center. The baking time may vary depending on your oven, so keep an eye on them to avoid over-baking.
  6. Allow the cookies to cool completely on the baking sheets. Once cooled, indulge in the rich, fudgy goodness of Dark Cookies. Store any leftovers in an airtight container to maintain their freshness.
