INGREDIENTS

  • 1 package (12.3 ounces) extra-firm tofu, drained and cubed
  • 1 teaspoon seasoned salt
  • 1 tablespoon canola oil
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • ½ cup light coconut milk
  • ¼ cup minced fresh cilantro
  • 1 teaspoon curry powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 cups cooked brown rice

 

INSTRUCTIONS

  1. Sprinkle the tofu cubes with seasoned salt. In a large nonstick skillet coated with cooking spray, heat the canola oil over medium heat. Add the tofu cubes and sauté until lightly browned. Remove the tofu from the skillet and set aside, keeping it warm.
  2. In the same skillet, add the chopped onion and minced garlic. Sauté for 1-2 minutes, or until the onion is crisp-tender.
  3. Stir in the light coconut milk, minced cilantro, curry powder, salt, and pepper. Bring the mixture to a boil, then reduce the heat to simmer. Cook the sauce uncovered for 4-5 minutes, or until it slightly thickens.
  4. Return the sautéed tofu to the skillet with the coconut curry sauce. Stir well to coat the tofu evenly with the sauce. Heat the tofu through.
  5. Serve the curried tofu alongside 2 cups of cooked brown rice. The fluffy rice acts as a perfect accompaniment to the flavorful tofu and creamy curry sauce.
