INGREDIENTS

  • 4 chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 bell peppers (red and green), sliced
  • 3 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 teaspoons Creole seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 can (14 ounces) diced tomatoes
  • 1 cup chicken broth
  • 2 bay leaves
  • Salt and black pepper to taste
  • Fresh parsley or green onions, chopped (for garnish)

 

INSTRUCTIONS

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat.
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. Sear the chicken breasts in the skillet until they turn golden brown, then remove them and set aside.
  4. In the same skillet, add the chopped onion, bell peppers, and celery. Sauté until they soften and develop a slight caramelization.
  5. Add the minced garlic, Creole seasoning, smoked paprika, dried thyme, and cayenne pepper to the skillet. Stir well to coat the vegetables with the spices.
  6. Pour in the diced tomatoes with their juice, chicken broth, and add the bay leaves.
  7. Return the seared chicken breasts to the skillet, nestling them into the sauce.
  8. Bring the mixture to a simmer, then reduce the heat to low, cover the skillet, and let it cook for about 20-25 minutes or until the chicken is cooked through and tender.
  9. Taste the sauce and adjust the seasoning with salt, pepper, or additional Creole seasoning if desired.
  10. Once the chicken is fully cooked, remove it from the skillet and set it aside on a cutting board.
  11. Increase the heat to medium-high and let the sauce simmer uncovered for a few more minutes until it thickens slightly.
  12. While the sauce simmers, shred or slice the cooked chicken.
  13. Return the shredded chicken to the skillet, tossing it in the sauce to coat evenly.
  14. Garnish with freshly chopped parsley or green onions.
  15. Serve the Creole Chicken hot with rice, pasta, or crusty bread to soak up the flavorful sauce.
