INGREDIENTS
- 1¼ cups Ensure® Vanilla powder
- 2 tbsp vegetable oil
- 2 small onions, diced
- 3 stalks celery, diced
- 2 medium carrots, diced
- 2 medium potatoes, diced
- 420g (1 tin) corn kernels
- 3 bay leaves
- 2L vegetable stock
- 1½ cups Full cream milk
- ⅓ cup flour
- 3 rashers bacon, trimmed and chopped
- ¼ cup chopped parsley to garnish
INSTRUCTIONS
- Place bacon into a large soup pot with vegetable oil and cook on medium heat until golden brown.
- Add onions and celery and stir until softened.
- Add carrots, potatoes, corn, bay leaves and stock and simmer gently for 5 minutes, or until vegetables are tender.
- Remove from heat and add Ensure® powder, flour and milk together and stir until smooth.
- Return to heat and simmer gently for a further 2-3 minutes and remove bay leaves.
- Serve sprinkled with parsley.
