  • 2 tablespoonfuls Crisco (or cooking oil of choice)
  • 1 quart peeled and diced potatoes
  • 2 cupfuls milk

  • 1 teaspoonful salt
  • 1/4 teaspoonful white pepper
  • Few breadcrumbs (for topping)

 

INSTRUCTIONS

  1. Preparing the Potatoes:
    • Peel the potatoes and dice them into approximately 1 1/2-inch pieces.
    • Boil the diced potatoes carefully in boiling salted water until they are cooked and tender. Drain the cooked potatoes.
  2. Assembling the Dish:
    • Preheat the oven to a hot temperature.
    • Grease a fireproof baking dish with Crisco.
  3. Making the Cheese Sauce:
    • In a saucepan, blend the Crisco and flour over medium heat to create a roux.
    • Gradually add the milk, stirring constantly until the mixture comes to a boil and thickens.
  4. Adding Cheese and Seasonings:
    • Stir in the grated cheese, allowing it to melt and incorporate into the sauce.
    • Season the sauce with salt and white pepper to taste.
  5. Layering and Baking:
    • Place the drained potatoes into the greased baking dish.
    • Pour the cheese sauce over the potatoes, ensuring even coverage.
    • Grate a little more cheese over the top for additional flavor.
    • Sprinkle a thin layer of breadcrumbs over the cheese.
  6. Baking the Dish:
    • Place the baking dish in the hot oven and bake for approximately five minutes, or until the top is golden brown and crispy.
  7. Serving:
    • Once the Creamed Potatoes au Gratin is baked to perfection, remove it from the oven.
    • Allow the dish to cool slightly before serving.
