INGREDIENTS

  • 2/3 cup light brown sugar
  • 2/3 cup granulated sugar
  • 1/2 cup butter
  • 1/2 cup vegetable shortening
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 teaspoon vinegar, cider or white
  • 1 teaspoon baking soda
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 cup white chocolate chips
  • 1 cup dried cranberries

 

INSTRUCTIONS

  1. Preheat the oven to 375ºF.
  2. Beat together the sugars, butter, shortening, salt, vanilla, vinegar, and baking soda until smooth.
  3. Mix in the egg until well incorporated.
  4. Add the all-purpose flour to the wet ingredients and mix until just combined.
  5. Fold in the white chocolate chips and dried cranberries, distributing them evenly throughout the dough.
  6. Using a cookie scoop or two tablespoons, portion the dough into balls and place them on a non-greased baking sheet, leaving about 2 inches of space between each cookie.
  7. Bake the cookies for 9 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a minute or two to set before transferring them to a wire rack to cool completely.
