COOKING FOR BABY SPINACH

Spinach takes no time to cook in the pressure cooker and it is terrific blended with other foods when your baby is ready. Puree the spinach and blend it with pureed brown rice or lentils for a complete dinner.

MAKES ABOUT 2 CUPS

 

INGREDIENTS

  • 1 cup filtered water
  • Four 10-ounce bags baby spinach

 

INSTRUCTIONS

  1. Pour the water into the pressure cooker. Arrange the trivet and steamer basket in the bottom. Put the spinach in the basket. Lock the lid in place. Cook at high pressure for 1 minute.
  2. Quick release the pressure and remove the lid, tilting the pot away from you to avoid the escaping steam. Using a slotted spoon, transfer the spinach to a food processor or blender. Puree the spinach, adding a bit of filtered water to thin the puree if necessary.
  3. Cool the puree completely. Store in airtight containers in the refrigerator for up to 3 days or in the freezer for up to 3 months.
