COOKING FOR BABY PLUMS

About

Brenda Gantt

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Juicy and sweet, plums are a great fruit to serve to baby either alone or mixed with other fruit.

MAKES ABOUT 4 CUPS

INGREDIENTS

  • 6 large plums, halved and pitted
  • 1 cup filtered water or juice

INSTRUCTIONS

  1. Combine the plums and water in the pressure cooker. Lock the lid in place and cook at high pressure for 6 minutes.
  2. Release the pressure naturally and remove the lid, tilting the pot away from you to avoid the escaping steam. Using a slotted spoon, transfer the fruit to a food mill or sieve set over a bowl and press the mixture through. Cool completely and store in airtight containers in the refrigerator for up to 3 days or in the freezer for up to 2 months.

GREAT COMBINATIONS:

  • Combine 4 large plums, halved and pitted; 2 large apricots, halved and pitted; and 1 cup of water or juice. Cook at high pressure for 6 minutes. Release the pressure naturally and strain the fruit.
  • Combine 4 large plums, halved and pitted; 1 cup of pitted cherries; and 1 cup of juice or water. Cook at high pressure for 6 minutes. Release the pressure naturally and strain the fruit.
