Carrot Soup with Ginger and Lemongrass
Glamour’s beauty editors call carrots “the friendliest skin food around.” They’ve read the studies and they know: Carrots are packed with beta carotene, which repairs the skin, and loaded with vitamin C, an antioxidant that battles free radicals. This zingy, gingery soup is a delicious way to get your skin fix, and it’s perfect with a salad for a light lunch.
Serves 2 to 3
INGREDIENTS
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons grated ginger
- 2 stalks lemongrass, bruised
- 4 cups chopped carrots
- 4 cups vegetable or chicken broth
- Salt and pepper
- Juice of 1 lime
- Cilantro leaves, for garnish
INSTRUCTIONS
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, ginger, and lemongrass and cook until the onion is soft and translucent, about 5 minutes.
- Add the chopped carrots and broth to the pot and bring to a boil.
- Reduce the heat and let simmer until the carrots are tender, about 20 minutes.
- Remove the lemongrass stalks from the pot and discard.
- Puree the soup with an immersion blender or transfer to a blender and puree in batches.
- Season with salt and pepper to taste and stir in the lime juice.
- Serve hot, garnished with cilantro leaves.
