Here is my twist on the popular tomato-mozzarella salad. Go ahead and splurge on the fresh mozzarella, the rest of the salad is so light!

INGREDIENTS

  • 1 cup fresh baby spinach
  • 2 medium yellow tomatoes, sliced
  • 2 medium red tomatoes, sliced
  • 4 ounces fresh mozzarella cheese, sliced
  • 2 tablespoons thinly sliced fresh basil leaves
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons olive oil

 

INSTRUCTIONS

  1. Arrange spinach on a platter; top with tomato and cheese slices.
  2. Sprinkle with basil, salt and pepper.
  3. Drizzle with vinegar and oil.
  4. Let stand for 15 minutes before serving.
