INGREDIENTS

For the Cake:

  • 1 cupful sugar
  • 3 cupfuls flour
  • 1/2 teaspoonful salt
  • 4 eggs
  • 1/2 cupful Crisco (shortening)
  • 1 cupful milk
  • 2 teaspoonfuls vanilla extract
  • 3 teaspoonfuls baking powder

 

For the Filling:

  • 1 teaspoonful Crisco
  • 1 cupful sugar
  • 1 cupful water
  • Pinch of cream of tartar
  • 1 teaspoonful vanilla extract
  • 1 white of egg
  • 1/2 cupful chopped cocoanut
  • 1/4 teaspoonful salt

 

INSTRUCTIONS

Preparing the Cake:

  1. Creaming and Mixing: Cream together the Crisco and sugar. In a separate bowl, sift the flour, baking powder, and salt. Add the sifted dry ingredients alternately with the beaten egg yolks and milk to the creamed mixture.
  2. Beating and Adding Whites: Beat the mixture thoroughly until well combined. Gently fold in the stiffly beaten egg whites and vanilla extract, ensuring a light and airy texture.
  3. Layering and Baking: Grease three layer cake tins with Crisco, then flour them. Divide the cake batter into three portions and pour each portion into a separate prepared tin. Bake the layers in a moderate oven for around twenty minutes, or until a toothpick inserted into the center comes out clean.

 

Preparing the Filling:

  1. Creating the Syrup: Boil together the water and sugar. Add the Crisco and cream of tartar to the boiling mixture, and continue boiling until it forms a soft ball when tested in cold water or reaches 240°F (116°C).
  2. Egg White Mixture: Beat the white of the egg until it forms a stiff froth. Add the salt and pour the syrup gradually into the beaten egg white, beating continuously until the mixture becomes thick and cold.
  3. Adding Flavor and Texture: Stir in the vanilla extract and chopped cocoanut, infusing the filling with tropical delight.

 

Assembling and Filling:

  1. Layering the Cake: Once the cake layers have cooled, spread the prepared filling generously between each layer, creating a sumptuous tiered cake.
  2. Finishing Touch: Sprinkle additional chopped cocoanut over the top layer to add texture and visual appeal.
