The history of Chocolate Cake finds its roots in the ancient civilizations of the Americas, where cacao beans were used to create beverages with spiritual significance. However, it wasn’t until the 19th century that chocolate began to be incorporated into cakes and pastries. Over time, innovations in cocoa processing and the mass production of chocolate transformed it from a luxury ingredient to a household staple, making Chocolate Cake accessible to people of various backgrounds.

As industrialization advanced, so did baking techniques, allowing for the creation of lighter and more tender cakes. The first chocolate cake recipes appeared in the late 19th century, featuring cocoa powder as a key ingredient. These recipes laid the foundation for the rich and flavorful chocolate cakes we enjoy today.

 

 

INGREDIENTS

For the Cake:

  • 1 cupful sugar
  • 3/4 teaspoonful salt
  • 1/4 cupful grated chocolate
  • 3/4 cupful Crisco (shortening)
  • 5 eggs
  • 2 cupfuls flour
  • 1 teaspoonful baking powder
  • 1/2 cupful sultana raisins
  • 1/2 cupful candied chopped citron peel

 

For the Chocolate Frosting:

  • 2 tablespoonfuls Crisco
  • 2 squares melted bitter chocolate
  • 2 cupfuls powdered sugar
  • 6 tablespoonfuls coffee
  • 1/4 teaspoonful salt
  • 1/2 teaspoonful vanilla extract

 

INSTRUCTIONS

Preparing the Cake:

  1. Creaming and Mixing: Cream the Crisco, then gradually add the sugar while continuing to beat. Incorporate the well-beaten egg yolks, grated chocolate, milk, flour, baking powder, salt, candied citron peel, and sultana raisins. Mix and beat the batter for two minutes until well combined.
  2. Whipping Egg Whites: In a separate bowl, whip the egg whites until they are stiff and hold their shape.
  3. Folding in Egg Whites: Gently fold the stiffly beaten egg whites into the cake batter. This step adds a light and airy texture to the cake.
  4. Baking: Pour the batter into a greased and floured cake tin. Bake the cake in a moderate oven for approximately one and a quarter hours, or until a toothpick inserted into the center comes out clean.

 

Preparing the Chocolate Frosting:

  1. Creating the Frosting Base: Knead the Crisco into the powdered sugar to create a smooth mixture.
  2. Adding Chocolate and Coffee: Melt the bitter chocolate and mix in the coffee, melted Crisco-sugar mixture, and salt. Stir the ingredients together until the mixture thickens.
  3. Adding Vanilla: Stir in the vanilla extract, infusing the frosting with its delightful flavor.

 

Assembling and Frosting:

  1. Cooling the Frosting: Allow the frosting to cool before using it to frost the cake. This ensures a smooth and spreadable consistency.
  2. Frosting the Cake: Once the cake has cooled, spread the chocolate frosting over its surface, creating a decadent finish.
