INGREDIENTS

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 celery rib, chopped
  • 1 envelope taco seasoning
  • ¼ cup water
  • 2 cans (16 ounces each) refried beans
  • 1 can (4 ounces) chopped green chilies (optional)
  • 1 cup (4 ounces) shredded cheddar cheese
  • 2 green onions, sliced
  • 1 large tomato, peeled, seeded, and chopped
  • ⅓ cup sliced ripe olives
  • 1½ cups crushed tortilla chips

 

INSTRUCTIONS

  1. In a large skillet, cook the ground beef, chopped onion, and chopped celery over medium heat until the meat is no longer pink. Drain any excess fat.
  2. Stir in the taco seasoning and water until well combined.
  3. Add the refried beans and chopped green chilies (if using) to the skillet. Mix everything together until evenly incorporated.
  4. Preheat the oven to 350°F (175°C).
  5. Grease an 11×7-inch baking dish and transfer the beef and bean mixture into it.
  6. Bake the casserole, uncovered, for 30 minutes or until heated through.
  7. After removing the casserole from the oven, sprinkle the shredded cheddar cheese evenly over the top.
  8. Scatter the sliced green onions, chopped tomato, sliced ripe olives, and crushed tortilla chips over the cheese.
  9. Serve the Cobre Valley Casserole while it’s hot, allowing the cheese to melt and the flavors to meld together.
