Chicken Tostadas with Mango Salsa is a vibrant and flavorful dish that combines the freshness of mango salsa, the tanginess of lime juice, and the tender texture of marinated chicken. This recipe offers a delightful fusion of Mexican and tropical flavors, creating a dish that is both delicious and refreshing.

Tostadas are a traditional Mexican dish consisting of crispy tortillas topped with various ingredients. The term “tostada” translates to “toasted” in Spanish, referring to the crispy nature of the tortilla base. Tostadas are known for their versatility, as they can be topped with a wide range of ingredients such as meats, vegetables, salsas, and sauces.

The addition of mango salsa to the chicken tostadas brings a tropical twist to the traditional Mexican dish. The vibrant colors and flavors of the mango salsa perfectly complement the marinated chicken, adding a sweet and tangy element to each bite.

INGREDIENTS

  • ⅓ cup orange juice
  • 5 tablespoons lime juice, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 pound boneless skinless chicken breast halves
  • 2 medium mangoes, peeled and diced
  • 1 small red onion, chopped
  • ½ cup minced fresh cilantro
  • 1 serrano pepper, seeded and minced
  • 2 tablespoons finely chopped crystallized ginger
  • 1 tablespoon brown sugar
  • ¼ teaspoon salt
  • 6 corn tortillas (6 inches)
  • 3 cups coleslaw mix
  • 6 tablespoons fat-free sour cream

 

INSTRUCTIONS

  1. In a large resealable plastic bag, combine the orange juice, 3 tablespoons of lime juice, garlic powder, and ground cumin.
  2. Add the chicken breast halves to the bag and seal it. Turn the bag to coat the chicken in the marinade. Refrigerate for at least 20 minutes to allow the flavors to infuse.
  3. In a small bowl, combine the diced mangoes, chopped red onion, minced cilantro, minced serrano pepper, finely chopped crystallized ginger, brown sugar, salt, and the remaining lime juice.
  4. Cover the bowl and chill the mango salsa until serving.
  5. Drain and discard the marinade from the chicken. Place the chicken on a broiler pan coated with cooking spray.
  6. Broil the chicken 4-6 inches from the heat for 5-7 minutes on each side, or until a thermometer inserted into the thickest part reads 165°F. Remove the chicken from the broiler and cut it into thin strips.
  7. In a nonstick skillet, cook the corn tortillas over medium heat for 1-2 minutes on each side, or until lightly browned.
  8. Top each tortilla with a layer of coleslaw mix.
  9. Arrange the sliced chicken on top of the coleslaw.
  10. Spoon the mango salsa over the chicken.
  11. Finish by adding a dollop of fat-free sour cream on each tostada.
  12. Serve the Chicken Tostadas with Mango Salsa as a light and refreshing meal. The combination of the marinated chicken, vibrant mango salsa, and crispy tortilla base creates a satisfying and flavorful dish. Enjoy the tropical twist on traditional Mexican flavors!
