INGREDIENTS

  • 4 cupfuls sugar
  • 1 cupful Crisco (or any vegetable shortening)
  • Pinch cream of tartar
  • 1 cupful water
  • 2 cupfuls almonds (blanched, split, and baked to golden brown)
  • 1/2 teaspoonful almond extract
  • 1/4 teaspoonful salt

 

INSTRUCTIONS

  1. Begin by blanching the almonds, removing their skins, and splitting them in half. Bake the almonds until they turn a golden brown color. This step enhances the nutty flavor and adds a delightful crunch to the taffy.
  2. Grease a tin with Crisco and sprinkle the split almonds onto it, placing the almonds split side down. This will create a visually appealing pattern on the bottom of the taffy.
  3. In a saucepan, dissolve the sugar and water together, creating a sugar syrup.
  4. Add the Crisco, salt, and a pinch of cream of tartar to the sugar syrup in the saucepan.
  5. Boil the mixture until it reaches the desired consistency. The syrup should become brittle when tested in cold water or reach a temperature of 300°F (149°C) on a candy thermometer.
  6. Once the syrup has reached the correct temperature or consistency, remove the saucepan from the heat.
  7. Add the almond extract to the syrup, infusing the taffy with the delightful flavor of almonds.
  8. Carefully pour the hot syrup over the arranged almonds in the prepared tin.
  9. Allow the taffy to cool and firm up. This may take some time, so exercise patience.
  10. Once the taffy is firm, use a knife to cut it into squares or rectangles, creating individual pieces of Clear Almond Taffy.
