MAKES: 4-6 SERVINGS

 

INGREDIENTS

  • 6 potatoes, peeled and diced
  • Water
  • 1 can (16 ounces) whole kernel corn, drained
  • 4 cups whole milk
  • 1 large onion, diced
  • 4 bacon strips, cooked and crumbled
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon dried thyme

 

INSTRUCTIONS

  1. Place the diced potatoes in a Dutch oven and cover them with water. Bring the water to a boil, then reduce the heat. Cover the Dutch oven and let the potatoes cook for about 10-15 minutes or until they become tender. Once the potatoes are cooked, drain them.
  2. Add the drained whole kernel corn, whole milk, diced onion, crumbled bacon, salt, pepper, and dried thyme to the cooked potatoes in the Dutch oven. Stir well to combine all the ingredients.
  3. Bring the mixture to a boil over medium heat. Once it reaches a boil, reduce the heat to simmer. Allow the chowder to simmer for approximately 15 minutes or until the onion is soft and the flavors have melded together.
