The history of apple cider in New England is deeply rooted in the region’s agricultural heritage. In the early days of New England settlement, apple orchards were a common sight on farms as they served the purpose of producing hard cider, a popular beverage for the entire family. At the time, beer was not as readily available, so hard cider became a staple drink. However, as people moved to cities and beer became more accessible, the demand for hard cider gradually declined.

INGREDIENTS

  • 3¼ cups all-purpose flour
  • ¼ cup sugar
  • 1 package (¼ ounce) quick-rise yeast
  • ½ teaspoon salt
  • ¾ cup 2% milk
  • ¼ cup apple cider or juice
  • ¼ cup plus ⅓ cup butter, softened, divided
  • 1 egg
  • 2 cups finely chopped peeled tart apples
  • 1¼ cups packed brown sugar
  • ¾ cup finely chopped walnuts
  • 3 teaspoons ground cinnamon

 

For the Apple Cider Cream Cheese Frosting

  • 2 cups apple cider or juice
  • 1 cinnamon stick (3 inches)
  • 1 package (8 ounces) cream cheese, softened
  • ¼ cup butter, softened
  • 1 cup confectioners’ sugar

 

INSTRUCTIONS

  1. In a large bowl, combine 2¼ cups flour, sugar, yeast, and salt. In a small saucepan, heat the milk, cider, and ¼ cup butter until it reaches a temperature of 120°-130°F (48°-54°C). Add the heated mixture to the dry ingredients and beat until just moistened. Add the egg and continue beating until the dough is smooth. Stir in enough of the remaining flour to form a soft and slightly sticky dough.
  2. Transfer the dough to a floured surface and knead for about 6-8 minutes until it becomes smooth and elastic. Cover the dough and let it rest for 10 minutes. Roll out the dough into a 15×10-inch rectangle. Spread the remaining softened butter over the dough, leaving a ½-inch border around the edges. In a separate bowl, combine the finely chopped apples, brown sugar, walnuts, and ground cinnamon. Sprinkle this mixture evenly over the buttered dough.
  3. Roll up the dough jelly-roll style, starting with a long side. Pinch the seam to seal. Cut the rolled dough into 12 slices. Place the slices cut side down in a greased 13×9-inch baking dish. Cover the dish and let the rolls rise in a warm place for 30 minutes.
  4. Preheat the oven to 325°F (163°C). Bake the rolls for 30-35 minutes or until they turn golden brown.
  5. While the rolls are baking, prepare the Apple Cider Cream Cheese Frosting. In a small saucepan, combine the apple cider or juice and the cinnamon stick. Bring the mixture to a boil and let it cook until the liquid is reduced to ¼ cup, which takes approximately 20 minutes. Remove the cinnamon stick and allow the reduced cider to cool. In a large bowl, beat the softened cream cheese and butter until fluffy. Gradually add the confectioners’ sugar and the reduced cider, beating until smooth.
  6. Once the rolls are baked and still warm, spread the Apple Cider Cream Cheese Frosting generously over the top of the rolls.
