INGREDIENTS

FOR THE CAKE:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 1/2 cups fresh mango chunks

 

FOR THE FROSTING:

  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

 

FOR THE GARNISH:

  • Fresh mango slices
  • Mint leaves (optional)

 

INSTRUCTIONS

FOR THE CAKE:

  1. Preheat the oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined.
  6. Gently fold in the fresh mango chunks, being careful not to overmix.
  7. Pour the batter into the prepared cake pan, spreading it out evenly.
  8. Bake the cake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

 

FOR THE FROSTING:

  1. In a chilled mixing bowl, whip the heavy cream until it starts to thicken.
  2. Gradually add the powdered sugar and vanilla extract while continuing to whip the cream.
  3. Whip the cream until it reaches stiff peaks. Be careful not to overwhip.

 

ASSEMBLY AND FROSTING:

  1. Once the cake has completely cooled, carefully slice it in half horizontally to create two layers.
  2. Place one cake layer on a serving plate or cake stand.
  3. Spread a generous amount of whipped cream frosting on top of the cake layer.
  4. Arrange fresh mango slices on top of the frosting.
  5. Place the second cake layer on top and frost the top and sides of the cake with the remaining whipped cream frosting.
  6. Garnish with additional fresh mango slices and mint leaves, if desired.
