INGREDIENTS:

  • 1 cup cooked quinoa mixed with 1 tbsp. sesame seeds
  • 1 cup cooked chickpeas
  • 1 cup chopped cucumber and green onions
  • 1/2 cup chopped tomato

 

DRESSING:

  • 1 tbsp. olive oil or avocado oil
  • 1 tbsp. fresh lemon juice
  • Pinch of black pepper
  • Pinch of sea salt

 

INSTRUCTIONS:

  1. In a large mixing bowl, combine the cooked quinoa mixed with sesame seeds, cooked chickpeas, chopped cucumber, green onions, and chopped tomato.
  2. In a separate small bowl, whisk together the dressing ingredients: olive oil or avocado oil, fresh lemon juice, black pepper, and sea salt.
  3. Pour the dressing over the quinoa and chickpea mixture.
  4. Toss all the ingredients together until everything is well coated with the dressing.
  5. Serve immediately as a light and nutritious salad, or refrigerate for a few hours to allow the flavors to meld together.
  6. Enjoy your flavorful and satisfying quinoa and chickpea salad! It makes a great side dish or a light meal on its own.

Here are some variations of the quinoa and chickpea salad recipe:
