Chicken Chili with Hominy

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

INGREDIENTS

  • 2 pounds chicken breasts, boneless and skinless, cut in 1 to 1 1/2-inch pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, thinly sliced
  • 1 can (15 oz) white hominy, drained
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (28 oz) tomatillos, drained and chopped
  • 1 can (4 oz) mild green chiles

PREPARATION

  1. Combine all ingredients in slow cooker; stir to blend all ingredients. Cover and cook on low for 7 to 9 hours, or high for 4 to 4 1/2 hours.
  2. Serves 4 to 6.
