Ingredients:
- 4 to 6 boneless, skinless chicken breasts
- 3 tablespoons butter
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1 cup chopped apple (about 1 apple)
- 1/3 cup applesauce
- 1/4 cup chopped pecans
- 1 box Stove Top stuffing mix (6 oz)
- 1/2 cup water
- 1 can cream of chicken soup (Healthy Request or low fat)
Preparation:
- Wash chicken breasts and pat dry; place in Crock Pot.
- Melt the butter in a skillet over medium low heat and saute the chopped onion, celery, and apple.
- Add pecans, water, applesauce, cream of chicken soup, and stuffing mix. Mix together; spoon over chicken in the Crock Pot.
- Cover and cook on low for 6 to 8 hours.
- Serves 4.
