I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

This is pretty obvious, but you can’t ignore a classic!

Yield: 1 serving, with 2 grams of carbohydrates, no fiber, and 32 grams of protein.

 

INGREDIENTS 

  • 1 tablespoon butter
  • 2 eggs, beaten
  • 2 to 3 ounces sliced or shredded cheese (Cheddar, Monterey Jack, Colby, American, Swiss, Gruyere, Muenster, or whatever you prefer)

 

INSTRUCTIONS 

  1. Make your omelet according to Dana’s Easy Omelet Method, placing the cheese over half of your omelet when you get to step 6.
  2. Cover, turn the burner to low, and cook until the cheese is melted (2 to 3 minutes).
  3. Follow the directions to finish making the omelet.
