INGREDIENTS

  • 1 cup stone-ground grits
  • 4 cups water
  • 1 teaspoon salt
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 4 large eggs, beaten
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Freshly ground black pepper to taste
  • Chopped green onions or parsley for garnish (optional)

 

INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or casserole dish with butter or cooking spray.
  2. In a large saucepan, bring the water and salt to a boil. Gradually whisk in the grits and reduce the heat to low.
  3. Cook the grits over low heat, stirring occasionally, for approximately 20-25 minutes or until they reach a smooth and creamy consistency.
  4. Remove the saucepan from heat and stir in the shredded cheddar cheese, shredded Monterey Jack cheese, grated Parmesan cheese, beaten eggs, melted butter, garlic powder, cayenne pepper, and black pepper. Mix well until all the ingredients are thoroughly combined.
  5. Pour the mixture into the prepared baking dish, spreading it evenly with a spatula.
  6. Bake the casserole in the preheated oven for approximately 30-35 minutes or until the top is golden brown and the casserole is set in the center.
  7. Remove the casserole from the oven and let it cool for a few minutes.
  8. Garnish with chopped green onions or parsley, if desired, for added freshness and color.
  9. Slice and serve the Cheese ‘n’ Grits Casserole warm, either as a main dish or as a delightful side to accompany meats, vegetables, or salads.
