INGREDIENTS

  • 7 cups sliced peeled tart apples
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • ¾ cup chopped pecans
  • ⅓ cup packed brown sugar
  • 3 tablespoons sugar
  • 4½ teaspoons ground cinnamon
  • 1 tablespoon cornstarch
  • ¼ cup caramel ice cream topping, room temperature
  • 1 unbaked pastry shell (9 inches)
  • 3 tablespoons butter, melted

 

STREUSEL TOPPING:

  • ¾ cup all-purpose flour
  • ⅔ cup chopped pecans
  • ¼ cup sugar
  • 6 tablespoons cold butter
  • ¼ cup caramel ice cream topping, room temperature

 

INSTRUCTIONS

  1. In a large bowl, toss the sliced apples with lemon juice and vanilla extract. In a separate bowl, combine the chopped pecans, brown sugar, sugar, cinnamon, and cornstarch. Add the pecan mixture to the apple mixture and toss until the apples are coated. Pour the caramel ice cream topping over the bottom of the pastry shell, then top with the apple mixture (the shell will be full). Drizzle melted butter over the filling.
  2. In a small bowl, combine the flour, chopped pecans, and sugar for the streusel topping. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle the streusel topping evenly over the apple filling.
  3. Bake the pie at 350°F (175°C) for 55-65 minutes, or until the filling is bubbly and the topping is nicely browned. Immediately drizzle the pie with caramel ice cream topping. Allow the pie to cool on a wire rack before serving.
  4. Caramel Pecan Apple Pie is best enjoyed slightly warm or at room temperature. Serve it on its own or with a scoop of vanilla ice cream for a truly indulgent dessert experience. Its combination of flavors and textures will leave you craving another slice of this delightful pie.
