Cabinet Pudding offered a clever way to utilize leftover or stale cake and transform it into a sumptuous dessert. INGREDIENTS

  • Sponge cake or leftover cake slices
  • Dried fruits (such as raisins, currants, and candied peel)
  • Brandy or rum (for soaking dried fruits)
  • Butter (for greasing the mold)
  • Custard mixture (made with eggs, milk, sugar, and vanilla)
  • Optional: Nutmeg or cinnamon (for flavoring)
  • Optional: Glacé cherries (for decoration)
  • Whipped cream or custard sauce (for serving)

 

INSTRUCTIONS

  1. Prepare the Dried Fruits:
    • Soak the dried fruits (raisins, currants, candied peel) in brandy or rum for several hours or overnight. This step plumps up the fruits and imparts a rich flavor.
  2. Grease the Mold:
    • Grease a pudding mold with butter to prevent sticking. This mold will hold the layers of cake and dried fruits.
  3. Assemble the Layers:
    • Cut the sponge cake into slices and arrange them along the bottom and sides of the greased mold. Create a layer of cake slices.
  4. Add Dried Fruits:
    • Scatter the soaked dried fruits over the layer of cake slices, ensuring an even distribution.
  5. Repeat Layers:
    • Repeat the process of layering cake slices and dried fruits until the mold is filled. This creates a beautiful mosaic of flavors.
  6. Prepare the Custard Mixture:
    • In a separate bowl, whisk together eggs, milk, sugar, and vanilla extract to create a custard mixture. Add a touch of nutmeg or cinnamon if desired.
  7. Pour the Custard:
    • Carefully pour the prepared custard mixture over the layered cake and dried fruits in the mold. The custard will seep into the layers, creating a luscious texture.
  8. Steam the Pudding:
