The nutty flavor and slightly chewy texture of brown rice make it an excellent base for pilaf dishes.

COOKING TIME: 45 MINUTES, PLUS 10 MINUTES RESTING

 

INGREDIENTS 

  • 1 cup brown rice
  • 2 cups vegetable broth or water
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1/2 red bell pepper, diced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric (optional)
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh parsley or cilantro
  • Optional: toasted nuts (such as slivered almonds or pine nuts)

 

INSTRUCTIONS 

  1. Rinse the brown rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat.
  3. Add the chopped onion to the saucepan and sauté for about 2-3 minutes, or until the onion becomes translucent.
  4. Stir in the minced garlic and sauté for an additional 30 seconds, or until fragrant.
  5. Add the diced carrot, celery, and red bell pepper to the saucepan. Sauté the vegetables for about 3-4 minutes, until they begin to soften.
  6. Add the ground cumin, ground turmeric (if using), ground coriander, dried thyme, salt, and black pepper to the vegetables. Stir the spices into the mixture to coat the vegetables evenly.
  7. Add the rinsed brown rice to the saucepan and stir it to combine with the sautéed vegetables and spices.
  8. Pour in the vegetable broth or water and bring the mixture to a boil.
  9. Once the mixture is boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and let the rice simmer for about 40-45 minutes, or until the rice is tender and the liquid is absorbed.
  10. Remove the saucepan from heat and let it sit, covered, for about 5-10 minutes. This allows the rice to steam and the flavors to meld.
  11. While the rice is resting, heat the remaining tablespoon of olive oil in a separate skillet over medium heat.
  12. If using, add the slivered almonds or pine nuts to the skillet and toast them until they are golden brown and fragrant. Keep a close eye on them to prevent burning.
  13. Fluff the cooked rice with a fork to separate the grains.
  14. Gently fold in the chopped fresh parsley or cilantro, incorporating it into the pilaf for a burst of freshness.
  15. Serve the Brown Rice Pilaf as a delightful and wholesome side dish or as a satisfying vegetarian main course.
  16. If desired, garnish the pilaf with the toasted nuts for added crunch and flavor.
