INGREDIENTS

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1½ cups fresh or frozen blueberries
  • 1 teaspoon grated orange peel
  • 2 eggs
  • 1 cup milk
  • 3 tablespoons canola oil
  • Whipped cream cheese (optional)

 

INSTRUCTIONS

  1. In a bowl, combine flour, sugar, baking powder, and salt. Stir in blueberries and orange peel.
  2. In another bowl, beat eggs; add milk and oil. Stir into dry ingredients just until moistened.
  3. Pour the batter into a greased 9×5-in. loaf pan.
  4. Bake at 350°F for 1 hour or until a toothpick inserted near the center comes out clean.
  5. Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
  6. Serve with whipped cream cheese if desired.
