The dessert originated in the United States in the late 19th century and has since become a staple in many households and bakeries across the country. It is believed to have derived its name from the way the cake buckles or collapses slightly as the berries sink into the batter during baking.

Blueberry Buckle typically features a moist and dense cake base, similar to a coffee cake, infused with a hint of vanilla or lemon zest for added flavor. The batter is generously studded with fresh or frozen blueberries, which burst with juiciness during baking and create pockets of vibrant fruit throughout the dessert.

INGREDIENTS 

FOR THE CAKE:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups fresh or frozen blueberries

 

FOR THE STREUSEL TOPPING:

  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, chilled and cut into small cubes

 

INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch square baking pan or a similarly sized baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, and salt for the cake.
  3. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. You can use an electric mixer or do this by hand with a wooden spoon.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing just until combined after each addition. The batter should be thick and smooth.
  6. Gently fold in the blueberries, being careful not to crush them.
  7. Spread the batter evenly into the prepared baking pan.
  8. In a small bowl, combine the flour, granulated sugar, and ground cinnamon for the streusel topping. Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  9. Sprinkle the streusel topping evenly over the cake batter.
  10. Bake in the preheated oven for 45-50 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  11. Remove from the oven and let the Blueberry Buckle cool for a few minutes before serving.
  12. Serve warm as is or with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
