Beef Stew with Peas and Carrots

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Serves: 8

 

INGREDIENTS:

  • 1-1/2 cups chopped carrots
  • 1 cup chopped onions
  • 2 tbsp. coconut oil
  • 1-1/2 cups green peas
  • 4 cups beef stock
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1/2 tsp. minced garlic
  • 4 pounds boneless chuck roast
  • Almond flour (for thickening)

 

INSTRUCTIONS:

  1. In a large pot or Dutch oven, cook the chopped onions in coconut oil over medium heat until they become tender, which usually takes a few minutes.
  2. Add the chopped carrots, green peas, beef stock, salt, black pepper, and minced garlic to the pot. Stir all the ingredients together to combine.
  3. Place the boneless chuck roast in the pot, making sure it is submerged in the liquid.
  4. Cover the pot with a lid and cook the stew over low heat for approximately 2 hours. This slow cooking process will help the flavors meld and the meat to become tender.
  5. In a small bowl, mix some almond flour with cold water to create a slurry.
  6. After the 2 hours of cooking, stir in the almond flour slurry into the stew. The almond flour will help thicken the stew and add a nutty flavor.
  7. Continue to cook the stew for another minute or so to allow the almond flour to thicken the sauce.

The delicious and hearty beef stew with carrots, onions, peas, and chuck roast is now ready to be served. Enjoy this comforting and flavorful dish on its own or serve it with your favorite side dishes for a satisfying meal!
