INGREDIENTS

FOR THE BRISKET:

  • 1 whole beef brisket, approximately 10-12 pounds
  • 2 tablespoons kosher salt
  • 2 tablespoons black pepper
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 teaspoon cayenne pepper (adjust to taste)

 

FOR THE MOP SAUCE:

  • 1 cup apple cider vinegar
  • 1 cup beef broth or water
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon hot sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • Salt to taste

 

INSTRUCTIONS

FOR THE BRISKET:

  1. Preheat your smoker or grill to a low and steady temperature of approximately 225°F (107°C). Ensure you have enough fuel for the entire cooking time.
  2. In a small bowl, combine the kosher salt, black pepper, paprika, garlic powder, onion powder, brown sugar, and cayenne pepper to create a rub for the brisket.
  3. Trim any excess fat from the brisket, leaving a thin layer to enhance flavor and tenderness.
  4. Generously apply the rub to all sides of the brisket, ensuring an even coating. Press the rub into the meat to help it adhere.
  5. Place the seasoned brisket on the smoker or grill, fat-side up, and close the lid. Maintain a consistent temperature throughout the cooking process.
  6. Allow the brisket to smoke for approximately 1 hour per pound, or until the internal temperature reaches around 195°F (90°C). Use a meat thermometer to monitor the temperature.
  7. While the brisket is smoking, prepare the mop sauce.

 

FOR THE MOP SAUCE:

  1. In a medium saucepan, combine the apple cider vinegar, beef broth or water, Worcestershire sauce, brown sugar, Dijon mustard, hot sauce, vegetable oil, smoked paprika, garlic powder, onion powder, black pepper, and salt. Whisk well to combine.
  2. Bring the mop sauce to a simmer over medium heat, then reduce the heat and let it simmer for approximately 10-15 minutes, allowing the flavors to meld together. Remove from heat and set aside.

 

TO FINISH THE BRISKET:

  1. After the brisket has reached an internal temperature of around 195°F (90°C), remove it from the smoker or grill and let it rest, loosely covered with foil, for about 30 minutes to an hour. This allows the juices to redistribute and the meat to become even more tender.
  2. Slice the Beef Brisket against the grain into thin, juicy slices. The grain of the meat refers to the direction of the muscle fibers.
  3. Serve the sliced Beef Brisket with the prepared mop sauce on the side, allowing guests to drizzle it over their meat as desired.
