Named after Richard Foster, a friend of Owen Brennan’s, the dessert gained fame for its dramatic tableside preparation and its luxurious blend of flavors.

  • 1/4 cup dark rum
  • 1/4 cup banana liqueur
  • 1/2 teaspoon ground cinnamon
  • Vanilla ice cream for serving

 

INSTRUCTIONS 

  1. In a large skillet, melt the butter over medium heat.
  2. Add the brown sugar and ground cinnamon to the melted butter. Stir until the sugar is dissolved and the mixture is smooth.
  3. Carefully add the dark rum and banana liqueur to the skillet. Be cautious, as the alcohol may cause the mixture to splatter.
  4. Cook the mixture for a minute or two, allowing the alcohol to cook off and the flavors to meld.
  5. Add the sliced bananas to the skillet. Gently stir the bananas to coat them with the caramel sauce.
  6. Tilt the skillet slightly away from you, and using a long lighter, ignite the alcohol in the pan. The flames will flambé the sauce, creating a captivating display.
  7. Allow the flames to subside naturally as the alcohol burns off.
  8. Once the flames have subsided, remove the skillet from the heat.
  9. Serve the Bananas Foster immediately, spooning the caramelized bananas and sauce over scoops of vanilla ice cream.
