Homestyle Banana Bread with Applesauce and Cinnamon
Perfect for breakfast, nice for snack time, and delish for dessert, with a dollop of whipped cream. This version calls for applesauce instead of butter and only the whites of the eggs, so it has all of the luscious moistness without the extra calories.
Serves 4 to 6
INGREDIENTS
- 3 ripe Bananas
- ½ cup Applesauce
- 4 Egg whites
- 1 teaspoon Vanilla extract
- ½ cup Granulated sugar
- ½ cup Light brown sugar
- 2 cups All-purpose flour
- 1 tablespoon Ground cinnamon
- 1 teaspoon Baking soda
- ¾ teaspoon Baking powder
- ¼ cup Vegetable oil
INSTRUCTIONS
- Preheat the oven to 350°F. Lightly grease a 9-by 5-inch loaf pan.
- Using a blender or an electric mixer, mash the bananas.
- Add the applesauce, egg whites, vanilla, granulated sugar, and light brown sugar. Blend until smooth.
- In a medium bowl, mix the all-purpose flour, ground cinnamon, baking soda, and baking powder.
- Slowly add the banana mixture to the flour mixture and stir until just combined.
- Stir in the vegetable oil gently, until just blended.
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 55 minutes. Test for doneness with a toothpick.
- Cool for 15 minutes before serving.
TIP:
- Bananas get sweeter as they ripen. When Joanna finds the coveted mushy, spotty ones, she peels them, tosses them in a Ziploc bag, and freezes them for up to 6 months, to use in future cooking sessions.
