  • 1 pound ground beef

  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups diced tomatoes
  • 1 cup beef broth
  • 1 cup frozen corn kernels
  • 1 cup frozen lima beans
  • 1 cup cooked rice
  • 2 teaspoons chili powder
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • Fresh parsley or green onions, chopped (for garnish)

 

INSTRUCTIONS

  1. In a large skillet or Dutch oven, brown the ground beef over medium heat, breaking it up into crumbles. Drain any excess fat.
  2. Add the chopped onion, minced garlic, and bell pepper to the skillet. Sauté until the vegetables become tender and aromatic.
  3. Stir in the diced tomatoes, beef broth, frozen corn kernels, and lima beans. Mix well.
  4. Add the chili powder, dried thyme, paprika, cayenne pepper, salt, and black pepper to the skillet. Stir to combine all the ingredients.
  5. Reduce the heat to low, cover the skillet, and let the mixture simmer for approximately 20-25 minutes, allowing the flavors to meld together.
  6. Cook the rice separately according to package instructions.
  7. Once the Arkansas Travelers mixture has simmered, remove the lid and stir in the cooked rice. Let it cook for an additional 5 minutes to ensure the flavors blend.
  8. Taste the dish and adjust the seasoning with salt, pepper, or additional spices if desired.
  9. Remove the skillet from the heat and let the Arkansas Travelers rest for a few minutes.
  10. Garnish with freshly chopped parsley or green onions.
