Apple Spice Cookies

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

 

INGREDIENTS:

  • 1 cup unsweetened almond butter
  • 1/2 cup raw honey
  • 1 egg
  • 1/2 tsp salt
  • 1 apple, diced
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/8 tsp nutmeg
  • 1 tsp fresh ginger, grated

 

INSTRUCTIONS:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a mixing bowl, combine the unsweetened almond butter, raw honey, egg, and salt. Mix well until the ingredients are thoroughly combined.
  3. Add the diced apple to the almond butter mixture and stir until the apple pieces are evenly distributed.
  4. Sprinkle in the cinnamon, ground cloves, nutmeg, and grated fresh ginger. Mix the spices into the batter until they are well incorporated.
  5. Line a baking sheet with parchment paper or lightly grease it.
  6. Using a spoon or a cookie scoop, drop spoonfuls of the batter onto the prepared baking sheet. Leave about 1 inch of space between each cookie.
  7. Flatten the cookie dough slightly with the back of the spoon or your fingers. The cookies won’t spread much during baking.
  8. Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cookies are set and the edges are lightly golden.
  9. Once the cookies are done baking, remove them from the oven and allow them to cool on the baking sheet for a few minutes.
  10. Carefully transfer the cookies to a wire cooling rack to cool completely. The cookies will firm up as they cool.
  11. Once the cookies are completely cooled, they are ready to be enjoyed as a tasty and nutritious treat.
  12. Store any leftover cookies in an airtight container at room temperature for a few days, or in the refrigerator for longer shelf life.
