INGREDIENTS

Apple Spice Cake

  • 1 cup flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp allspice
  • 1/2 stick butter, room temperature
  • 1/2 cup brown sugar
  • 1 egg
  • 3/4 cup unsweetened applesauce

 

Vanilla Buttercream

  • 2 sticks butter, room temperature
  • 1/2 cup vegetable shortening
  • 1 tsp vanilla paste (or extract or vanilla bean pods)
  • 5-7 cups powdered sugar

 

Caramel Drizzle

  • 1/4 cup heavy cream
  • 1 tbsp unsalted butter
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 6 tbsp sugar
  • 1 tbsp light corn syrup
  • 1 tbsp water

 

INSTRUCTIONS

  1. Preparation
    • Preheat the oven to 350°F (175°C).
    • Grease the bottom and sides of a 6-inch round cake pan or springform pan with butter. Line the bottom with a round piece of parchment paper. Secure a bake-even strip around the pan for even baking.
  2. Apple Spice Cake
    • In a small bowl, combine flour, baking soda, baking powder, salt, cinnamon, cloves, and allspice. Mix well.
    • In a larger bowl, cream together butter and brown sugar with an electric mixer until creamy.
    • Add the egg and mix with the mixer.
    • Mix in the unsweetened applesauce by hand with a spatula.
    • Gradually add the flour mixture, mixing by hand until incorporated.
    • Scrape the batter into the prepared cake pan and spread it evenly with a spatula.
    • Bake for 23-25 minutes or until a toothpick inserted in the center comes out clean.
    • Let the cake cool in the pan on a cooling rack for 10 minutes, then carefully remove it from the pan and let it cool completely.
  3. Vanilla Buttercream
    • In a large mixing bowl, beat butter and vegetable shortening with an electric mixer until fluffy.
    • Add vanilla paste and continue to beat with the mixer.
    • Gradually add powdered sugar (about 1-2 cups at a time), mixing by hand first, then with the electric mixer, until the frosting reaches the desired sweetness.
  4. Caramel Drizzle
    • In a saucepan, heat heavy cream, unsalted butter, salt, and vanilla extract over medium heat until it starts to simmer. Remove from heat.
    • In a separate saucepan, combine sugar, light corn syrup, and water over medium-high heat. Cook without stirring until the mixture turns amber in color.
    • Carefully whisk the cream mixture into the sugar mixture. Stir until smooth and well combined.
  5. Assembly
    • Place the first layer of cake on a 6-inch round cardboard cake circle.
    • Spread buttercream on top of the first layer, then add more layers and frosting as desired.
    • Place the assembled cake in the freezer or fridge for 20 minutes to harden the buttercream.
    • Drizzle the cooled caramel sauce around the center and sides of the cake, allowing it to drip down.
    • Add cinnamon sticks or other garnishes to the top of the cake for decoration.
