Amish Breakfast Casserole is a comforting and hearty dish that originated in Amish communities known for their simple and delicious recipes. This particular recipe was obtained during a visit to an Amish inn, where the ingredients were shared from memory by one of the ladies. It has been modified to create a version that is loved by the family of the recipe creator. This breakfast casserole combines the savory flavors of bacon, onions, and cheeses with eggs and shredded hash brown potatoes. It is a versatile dish that can be enjoyed for breakfast or brunch, and you can even substitute breakfast sausage for the bacon to add a different twist.

The Amish communities are known for their traditional way of life, which includes preparing meals using unprocessed and wholesome ingredients. The largest Amish community in the United States is located in Lancaster County, Pennsylvania. The Amish, who are descendants of Swiss-German settlers, have a rich culinary heritage that focuses on simplicity and flavor.

Breakfast is an important meal for them, providing sustenance and energy for the day ahead. INGREDIENTS

  • 1 pound sliced bacon, diced
  • 1 medium sweet onion, chopped
  • 6 eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups (8 ounces) shredded cheddar cheese
  • 1½ cups (12 ounces) 4% cottage cheese
  • 1¼ cups shredded Swiss cheese

 

INSTRUCTIONS 

  1. Cook the bacon and onion: In a large skillet, cook the diced bacon and chopped onion over medium heat until the bacon is crispy. Drain the excess fat.
  2. Prepare the casserole mixture: In a large bowl, combine the lightly beaten eggs, thawed shredded hash brown potatoes, shredded cheddar cheese, cottage cheese, and shredded Swiss cheese. Stir in the cooked bacon and onion mixture, ensuring all the ingredients are well incorporated.
  3. Transfer to a baking dish: Grease a 13×9-inch baking dish and transfer the casserole mixture into it, spreading it out evenly.
  4. Bake the casserole: Preheat the oven to 350°F (175°C). Bake the casserole, uncovered, for 35-40 minutes, or until a knife inserted near the center comes out clean. The top should be golden and the edges slightly crispy.
  5. Let it stand before serving: Once the casserole is baked, remove it from the oven and let it stand for 10 minutes to allow it to set. This makes it easier to cut into servings.
  6. Serve and enjoy: Cut the casserole into portions and serve it warm. It can be enjoyed as a delicious breakfast or brunch option, accompanied by fresh fruit, toast, or your favorite breakfast sides.

 

NOTE:
