Almond Raisin and Caper Relish

WHY THIS RECIPE WORKS Golden raisins plus briny capers, crunchy almonds and white wine vinegar make for a sweet, salty, and tangy topping. Champagne vinegar can be used in place of white wine vinegar and regular raisins in place of golden raisins, if desired.

Makes about ½ cup

 

INGREDIENTS

  • 2 tablespoons golden raisins
  • 1 teaspoon white wine vinegar
  • ¼ cup sliced almonds, toasted and chopped fine
  • 1 tablespoon capers, rinsed and chopped fine
  • 1 teaspoon minced fresh parsley
  • Pinch red pepper flakes
  • 3–4 tablespoons extra-virgin olive oil
  • Salt and pepper

 

PREPARATION

  1. Combine raisins and 2 tablespoons hot water in small bowl and let stand for 5 minutes.
  2. Drain raisins and chop fine.
  3. Toss raisins and vinegar in bowl, then stir in almonds, capers, parsley, and red pepper flakes.
  4. Stir in 3 tablespoons oil; mixture should be well moistened. If still dry, add remaining 1 tablespoon oil.
  5. Season with salt and pepper to taste.
