INGREDIENTS

  • 2 cups cubed cooked chicken
  • 1 can (10¾ ounces) condensed cream of chicken soup, undiluted
  • 1 cup (8 ounces) sour cream
  • ¾ cup mayonnaise
  • 2 celery ribs, chopped
  • 3 hard-cooked eggs, chopped
  • 1 can (4 ounces) mushroom stems and pieces, drained
  • 1 can (8 ounces) water chestnuts, drained and chopped
  • 1 tablespoon finely chopped onion
  • 2 teaspoons lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup (4 ounces) shredded cheddar cheese
  • ½ cup crushed cornflakes
  • 2 tablespoons butter, melted
  • ¼ cup sliced almonds

 

INSTRUCTIONS

  1. In a large bowl, combine the cubed cooked chicken, condensed cream of chicken soup, sour cream, mayonnaise, chopped celery, hard-cooked eggs, drained mushrooms, chopped water chestnuts, finely chopped onion, lemon juice, salt, and pepper. Mix well until all ingredients are evenly combined.
  2. Transfer the mixture to a greased 13×9-inch baking dish and spread it out evenly.
  3. Sprinkle the shredded cheddar cheese over the top of the casserole.
  4. In a separate bowl, toss the crushed cornflakes with melted butter until evenly coated. Sprinkle the buttered cornflakes over the cheese layer.
  5. Finally, sprinkle the sliced almonds over the top.
  6. Bake the casserole, uncovered, at 350°F for 25-30 minutes or until heated through and the topping is golden and crispy.
  7. Serve the Almond Chicken Casserole hot and enjoy its creamy, flavorful goodness.
